Chef de Partie

Hours Per Week: up to 40 hours per week
Rate of Pay: $22.00 per hour
Purpose
Reporting to the Executive Chef, our Chef de Parties assist in all food outlets of the Summit Lodge to prepare, cook and present food according to Sea to Sky Gondola’s standard recipes. Our CDPs provide support and guidance to allow our line cooks to engage with our guests and suggestively sell food and beverage products. All kitchen team members help ensure proper receiving, storage (including temperature setting) and rotation of food products to comply with health department regulations.
Duties and responsibilities
- Provide leadership to the kitchen team.
- Assist in training, coaching and development.
- Support sustainability goals to reduce waste and energy consumption and encourage employee and guest engagement.
- Train all staff to recipes, and station guides.
- Responsible for opening and closing the kitchen and restaurant.
- Prepare the necessary food items, including baked good, as directed by the Executive Chef and according to the Sea to Sky Gondola standards and recipes.
- Assist Catering Chef with production for events.
- Adhere to standardized recipes and specifications in order to maintain consistency.
- Keep work station clean and organized, including fridges/freezers, countertops, and stove tops.
- Ensure that station opening and closing procedures are carried out to standard.
- Keep overproduction and food waste to a minimum to reduce food cost expense.
- Always operate all kitchen equipment with safety in mind.
- Ensure that all food products are handled, stored, prepared, and served safely in accordance with Food Safety guidelines.
- Interacts with Gondola Guests in a positive and engaging manner when in contact with them
- Assist in the ordering of all products.
- Embody our value “safety starts with us” and comply with health and safety regulations, participate in Sea to Sky Gondola’s health and safety program, and report incidents, injuries, and unsafe conditions in a timely manner.
- Promote a culture of safety and lead by example. Ensure Team Members under your direct supervision follow safe work procedures and wear appropriate personal protective equipment.
- All other duties as assigned by the Chef and other team members as required.
Skills, experience & education
- Minimum 1-2 years of experience in a similar role.
- Must have Food Safe Certification.
- High attention to detail and can multitask under pressure to meet deadlines.
- Culinary certification/education an asset.
- Must have strong knife skills.
- Ability to work with minimal supervision and lead a team with a mature, friendly and professional attitude.
- Strong communication skills and the ability to interact with guests and team members.
- Training in safety and sanitation.
- The ability to present well, keep food station clean and stocked throughout service.
- Proven ability to multitask with strong organizational skills.
- Team player, willing to cross-train and help as needed in all areas of F&B.
- Must be able to exert well-paced mobility for up to 10 hours in length.
- Mature, friendly, and well-groomed.
- Criminal record check required.
